Easy Peasy

18It’s easy peasy to just put some things in a bowl, mix it up and eat! I use this meal quite often for after I get back from the gym. Because of the chickpeas and peas it’s a good protein meal and it has good fats. Sometimes I even make it in advance. So handy, because when I get home I can eat it, take a shower and I will have more time to relax. Apart from all this, it’s also very tasty! It’s one of my favourite quick meals. I love the structure from the chickpeas with the sweet from the peas and the spiciness from the avocado sauce. It’s a delicious combination!

16EASY PEASY

Serves: 1

salad
1/2 cup peas
1/2 cup chickpeas (cooked)
1/2 bell pepper (chopped)
1/4 cup corn
sauce
1/2 avocado (mashed)
1 tsp lemon juice
1 tsp sesame oil
1 garlic clove (mashed)
1/8 tsp ground turmeric
salt/pepper (to taste)
extra
1 hand ful rocket

17-To make it even easier. Have all the ingredients already measured and ready to use.
-Mix all the ingredients for the sauce in a bowl. You can use a spoon or a food processor.
-Add the peas, the chickpeas, the bell pepper and the corn and mix well.
-Place a bit of rocket on a plate and serve the salad on top.

Autumn Warmth

tI like Autumn. I love how the trees change colour, the dark grey skies full of rain, rainbows, sunsets.. Autumn is all about colour. It’s also a little bit cold, but it’s not freezing. Let’s say it’s that kind of cold I can handle, haha! I think London parks are so beautiful now, with the beautiful trees all green, yellow, red and orange. You can find lots of acorns, hazelnuts, conkers.. and what about the chestnuts you can find in most parks, free lunch! Going for a stroll in Autumn is definitely no punishment. Though, isn’t it nice to come home to a warm cup of tea?! That is nice! So nice! Did you know you can easily make tea by yourself? Here is a delicious spicy (if you want it less spicy, reduce pepper corns and ginger) tea recipe with lots of goodness, what will also give your immune system an extra boost!

t3AUTUMN WARMTH

serves: 4

1l water
1 apple (cut into 4)
3 cm ginger (peeled)
2 cm turmeric (peeled)
2 cinnamon sticks
6 cardamom pods
10 black pepper corns
2 star anise

-Put all the ingredients in a sauce pan and put it on a medium fire.
-When it boils, put the fire down and let it simmer for about 15-20 min.
-Pour the tea through a sieve into a cup.

Creepy Tasty

hI actually wanted to post this tomorrow on Halloween itself, but as it’s on a monday this year, I think everybody already celebrated it yesterday and I might be way too late now, haha.. so I decided to post it now. In case somebody likes to make it today or maybe tomorrow!

In Holland we don’t do Halloween. We do have something similar though, called ‘Sint Maarten’. Kids go with a hand-made lanterns from door to door and sing songs and will get a treat. But it has nothing to do with scary things or dressing up. I like it. Personally I’m not a big fan of Halloween, but I did like making a recipe for it. I also like all the pumpkins everywhere and people being creative with them. So in a way I do like Halloween, I just don’t like the dressing up and the skeleton and zombie fun. It’s just not me, haha!
For this recipes I chose spiders. As a vegan I like to involve animals in a positive way, though this seems like we’re eating them. No worries, the spiders are made of olives.. yup! Personally I don’t think they are scary btw, but I know people think they are. Are you scared of spiders? Hopefully after making this you think spiders are a lot of fun!

h3CREEPY TASTY

serves: 2

2 bunches of black noodles
sauce
1/2 onion (chopped)
1 big clove of garlic (mashed)
1 can chopped tomatoes
1/4 tsp smoked paprika
1/4 tsp oregano
pepper/salt (to taste)
decorations
1/4 cup cheese (grated)
9 black olives (cut into spiders)

h2-Cook the noodles as described on the pack.
-Fry the onion and the garlic for about 2 minutes.
-Add the smoked paprika and oregano. Also add some pepper and salt to taste.
-Put the lid on the pan an let this simmer for about 10 minutes on a low fire.
-In the meantime cut up the olives: Use half an olive for the body of the spider and use 1 whole olive (cut into 8) for the paws.
-Put the noodles on a plate and pour the hot sauce over it.
-When it’s still hot make a spiderweb with the cheese: Make a few circles from small to big and then start in the middle making a star-shape.
-Add the spiders.

AvoSmoothie

14Who likes avocados? I know you’re all raising your hand right now.. haha! Though there are actually a few people who really cant stand avocado’s (like how??), this recipe will I think satisfy everybody. There is not a very strong avocado taste and the structure obviously is way different as it comes in a smoothie. What basically leaves us with a nice creamy goodness with lots of good fats and vitamine E! Also, did you know that the potassium in an avocado can regulate a high blood pressure? So many reason to try this delicious smoothie. It’s great for breakfast or as a post work out snack!

13AVOSMOOTHIE

Serves: 1

300 ml soy milk
1/2 avocado
1 frozen banana
2 medjool dates
1/2 tsp cinnamon

Put all the ingredients in a blender and blend until it’s smooth, creamy and has this beautiful light green colour.

RainBOWL

6They say ‘eat the rainbow’. Well, now you can. The more colours in a salad, the better I always think. I love cauliflower and I didn’t eat it for very long as it always gave me big tummy aches. I now know it can happen when you cook it for too long. In this salad I use raw cauliflower, what is super tasty and a lot less chance to have a tummy ache after. I never had a tummy ache from raw food anyway. What only teaches us how healthy and good it is for our bodies to eat raw. The whole salad is raw by the way and it’s very delicious. The flavours really improving each other and you feel so full of energy after eating it. Personally I like to eat raw salads for lunch, but of course you can enjoy the any time. Here is the recipe guys:

RAINBOWL

5Serves: 1

salad
1 cup cauliflower rice
1 tomato (chopped)
1/3 yellow bell pepper (chopped)
1/2 cup peas
1/4 cup corn (from cob)
1 hand red cabbage (diced)
1 small carrot (grated)
fresh coriander (to taste)
dressing
1 tbsp olive oil
1 tbsp sesame oil
1/4 tsp balsamic vinegar
1/2 clove garlic (mashed)
1/2 tbsp lemon juice
salt/pepper (to taste)

-Use a food processor to make rice out of cauliflower and then mix all the vegetables in a bowl.
-Put all the ingredients for the dressing in a container with a lid and shake well.
-Pour the dressing over the vegetables and serve with some fresh coriander.
-Add salt/pepper to taste.

Tropical London

11I know.. London isn’t a very tropical city and now Autumn started we can expect a lot of wind, storm and rain. That’s why I thought, let’s do a last summery recipe, just to end summer properly on this last day op September. Though there was quite some rain (I actually like summer rain.. a lot!) and cloudy days, I think we also have to be very grateful for all the lovely sunny days we have had. So let’s celebrate summer one more time. Let’s honour all our summer memories. Let’s relive them one more time, before all the leafs have fallen of the trees. Invite the friends you have spent this summer with and make this delicious tropical smoothie together. Cheers to summer!

TROPICAL LONDON

9Serves: 2

200 ml orange juice
1/2 pineapple
1/2 mango
1/4 cup coconut cream
1 passion fruit

-Blend all the ingredients together in a blender until smooth.
-You can add some toppings like chia seed, extra passion fruit or some extra coconut cream. Enjoy!

ChOCO Dream

13499852_1178672795510155_944827911_oFor this recipe I was inspired by a Dutch cake, called ‘Arretjescake’. It’s actually with eggs and a lot of butter. It’s a very unhealthy cake, but super delicious. The recipe I made is not only vegan and super delicious, it’s also healthy. Or actually there is an option to make it all healthy. There are biscuits used in this cake. If you decide to make healthy biscuits before making this recipe, the whole cake would be healthy. The cake is very filling, that’s why it’s quite small. In case you have to treat a lot of people, you can always easily double the recipe. Use a little cake tin or any small dish, but if you double it, you can easily use a standard cake tin.
One of my aunts always made this recipe and whenever there was a party at her house, I always chose this cake. I could really get excited if I knew she made one. I hope you get just as excited after tasting it. It’s super easy, fast and does not require any baking. Everybody can make this!

175 gr plain biscuits (crushed)
1/2 cup palm sugar
1/2 cup coconut oil (melted)
1/3 cup plain soy yogurt
1 tbsp flaxseed (+ 3 tbsp water)
2 tbsp cacao powder

13555816_1178672805510154_1221867065_o-Mix the sugar, coconut oil, yogurt, flaxseed mixture and the cocoa powder with an electric mixer until smooth.
-Make sure the mixture is not warm anymore (from the coconut oil) before you gently mix in the biscuits.
-Put some cling foil into a baking tin and divide the mixture.
-Place it in the fridge for at least 3 hours, but ideally overnight.

Spicy Crunch

13523655_1178672738843494_261602795_oThis raw salad has a bit of a spicy crunch, though it’s very fresh! Perfect for a lovely lunch on a summer day. The radishes and the turmeric, combined with the raw garlic give a nice little tingle on you tongue. Personally I love this salad, because it has such a rich taste, it’s filling, raw and super healthy. It’s also a perfect side dish salad. With lasagna, pizza or a burger and chips.. and what about a nice vegan barbeque? And I’m sure you can also think of a good reason to make this yummy salad! So start chopping and mixing and enjoy every bite..

SPICY CRUNCH

1 gem lettuce (chopped)
1/2 cucumber (chopped)
1/2 yellow pepper (chopped)
6 radishes (diced)
1 spring onions (chopped)
1 avocado (smashed)
1 tbsp lemon (juice)
1 big garlic clove (smashed)
1 tbsp sesame oil
1/2 tsp turmeric
Salt/Pepper (to taste)

-Put the lettuce, cucumber, pepper and spring onion in a bowl.
-Mix the avocado with the garlic, lemon juice, turmeric and sesame oil and add salt and pepper to taste.
-Add this to the vegetables and mix well.

Simply Heaven

Chocolate and peanut butter.. I know it gets better and better. Milkshakes are a very good snack. And you can also drink them before or after a sweaty work out. This one especially is very good for that. It’s filling, but filled with energy. I actually made this recipe sort of by accident. I fancied a milkshake and got all the things I liked and could find and put it together. The result was so tasty that I decided to write it down so I can share it with you guys. I hope you’ll like it just as much as me. Enjoy!

Rice over Lentils

13405102_1168776779833090_300747973_oAnother cheat recipe! Always handy after a busy day, when you don’t feel like cooking that day or if you’re working out and you need a quick healthy meal. If you’d eat it with brown rice, this one should be a good one before or after a good sweaty work out. Because of the high protein levels in lentils and the carbs in rice. If you know you’re going to be in a rush, you can even make the rice in advance, so you only have to warm it up. Amy’s Kitchen is a lovely brand, as the vegetables in the soup are organic and there is no sugar or other crap. Not all the soups are vegan btw, so make sure you check the ingredient list before buying. This lentil version is definitely my favourite, but the ‘Rustic Italian Vegetable’ one is also a very nice one. Not sure if that will be nice with rice as I’ve never tried it, but you can also eat only the soup of course and serve some pita bread on the side. Yum!

RICE OVER LENTILS

1 can of ‘Amy’s Kitchen’ lentil soup
3 cups of rice (cooked)
1/2 avocado (optional)

-Warm the soup. Make sure it doesn’t boil.
-Make the rice as described on the package.
-Cut the avocado.
-Serve together.
