img_6691A creamy, filling and delicious breakfast for champions. This breakfast is super nutritious and full of goodness. I often eat this after my work out. It’s full of proteins, fibres and good fats. Great for my body to release some new energy and to heal my muscles. As I most of the time work out in the evenings, I soak the cashews and seeds overnight. I blend it the next morning and then add the oats and the coconut. This way it’s ready for me when I come back in the evening. I don’t always add fruit, sometimes just peanut butter is nice enough. Only just sometimes I like to add some berries. Especially blueberries are a favourite. Give this recipe a try, especially when you’re a very busy and active person.

Serves: 1

1 cup almond milk
1/3 cup cashews
1 tbsp linseeds
1 tsp chia seeds
1/2 cup oats
1 tbs dried coconut
1 tbs peanut butter
1 tbs pumpkin seeds
1 tbsp agave nectar
fruit

-Soak the cashews, the linseeds and the chia seeds for at least 3 hours in the almond milk.
-Then blend it with the agave nectar, until it’s smooth.
-Add the oats and the desiccated coconut and put it in the fridge for 3 hours or overnight.
-Give it a good mix and put the fruit, the peanut butter and the pumpkin seeds on top before serving.

Gracelands

img_7532I went to Gracelands on a very stormy day. The storm was so crazy, that they put a table and door stoppers to stop the door from opening all the time and the storm blowing everything away inside. Luckily, you can also go into Gracalands via the back. There is a building called ‘Graclands Yard‘ and I sometimes go there with the baby I look after, for a music class. They also do yoga classes, pilates classes and lots more.. it’s worth taking a look! So I came in via the back. This way you basically come in via the kitchen, but it’s allowed to go via there any time. Very convenient in these extreme weather conditions I must say.

img_7530I ordered a Chai tea with soy milk and an organic porridge with fruit compote. They  normally make it with cow’s milk, but I asked if it was possible to have it with almond milk and that was totally fine. They were super easy going. I was very curious about the fruit compote. The tea came first and I did have to wait a little longer for my porridge though. It was a little busy, must have been all people who tried to find shelter from the storm. It was worth the wait though, because the porridge looked lovely and it was very tasty! I really liked that it was made with whole rolled oats. This way it’s a bit more chewy. I like my porridge like that. It makes me think about the way my grandma makes it. The fruit compote was super tasty too. It was pear, grapes and maybe even some other fruit too. It had these yummy winter spices, what was a super nice combination with the warm porridge. The tea was from Pukka and I like that tea a lot. Lovely breakfast all together! You can also get salads and I’m sure they can make you something vegan in case you’re there for lunch.

img_7531Gracelands is quite a big cafe. It has lots of big vintage tables and chairs and it is perfect for if you want to take your laptop and work for a bit. It’s quite close to my flat, so I might have breakfast here more often and work there in the morning. Because of there are children classes and a play corner for children, there are a lot of mums and nannies with their children. So be prepared for that though. On the other hand, if you have children yourself, it’s a lovely cafe to go to! The style is very vintage and I think it’s a very nice style for a cafe. The front is already very nice, with the colours and the little lights hanging in the windows. They sure created a nice atmosphere. I think they could have done even better though, as here and there it does look a bit messy or something. The staff is very friendly and the food is nice, so worth a go!

Low Budget Vegan

13405509_1164889170221851_1759293727_o‘I wish I could be vegan too, but I’m on a budget’. Well.. good news, you can be vegan from today! A lot of people think that being vegan is very expensive. Personally I think that is because there are so much so called ‘superfoods’ at the moment and people seem to think that if you’re vegan, you need those, otherwise you die. Though I sometimes do get these ‘superfoods’, I see it as a luxury product. You can totally survive without chia seed and you also won’t die if spirulina isn’t a standard product in your cupboard. Also, you don’t need to eat meat substitutes every day, just make sure you eat enough beans/pulses. Of course you can treat yourself to it, once in a while. You will actually see, that being vegan is a lot cheaper than being an omni. Especially with some good tips:

img_8343Make a meal plan. Once a week, take the time to sit down and make a meal plan. Make sure that 2-4 times a week, you make a little more of something, so you’ll have a quick meal for the next day. This is not only time saving, but also money saving.
Make a grocery list. By making a meal plan, you know exactly what you need. Make a list and only get that.
Buy in bulk. Make sure you always have things like rice, pasta, beans/pulses and grains in the cupboard. This way you only have to top of with fresh produce and only once in a while you top this up. At the Whole Foods Market for example, you can fill a bag yourself with rice, grains, beans, dried fruits etc. It’s a lot cheaper than if you get a pack from the shelf.
Buy in sale. Always buy (especially the more expensive things) when things are on sale. Like coconut oil for example, but also less expensive things like a nice pasta or soup.
Buy in discount. In the end of the day a lot of supermarkets have a lot of fruit/veggies and bread for a super low price. A bread for just 40 p or a bag of potatoes for 20 p! Most of the time they’re totally fine, but just because supermarkets can’t sell stuff what is out of date, it has to go and it goes away for cheap. Buying like this you’re also helping to reduce food waste.
Use coupons. In a lot of supermarkets and health stores you get coupons. Direct discounts or product coupons. A lot of times the coupons are for things you got earlier. So they will be things you most likely use anyway. Make sure you plan a meal where you will use this product, so you use them. Put them in a file and write down the dates somewhere, so you know when to use them.
fm2Go to the Farmers Market. At the farmers market you have really good fruit and veggies and mostly it’s a lot cheaper than if you get it in the supermarket. A lot of things at the Farmers Market are also organic, so win win!
Make things yourself. You can buy expensive lentil burgers, but with just a few ingredients you can make a whole lot yourself. Freeze them and you’re good for a while. Same way with making a yummy banana bread. Slice it up, pack them separately and put them in the freezer. This way you will have a nice cheap snack for at least 8-10 days.

In the beginning this might feel like a hassle. Making things yourself, looking for discounts all the time. But believe me, it will get easier, you’ll get the hang of it and eventually it will feel all natural. You might even start to really enjoy it. Make it a challenge to get your weekly groceries and keep the total as low as possible. This, whilst you make super nice meals of course. Good luck!

Keen On Aubergine

img_6378If you read my Christmas Holiday travel post, you know that I made this aubergine dish a lot when I was in Holland. This recipe is just real a winner. In all aspects. It is super easy to make, though it tastes like you have been cooking for hours, it’s super healthy and filling and everybody loves it! It’s a perfect dish for if you have a dinner party, for if a friend is coming over or to bring to someones house if you have been invited. I’m positive people will ask you for the recipe (you can just send them this link..). Also you can easily make a lot of it. You do need quite a big pan for the aubergine in case you want to double or triple the recipe. You might want to do that in two times. It’s worth it though!

img_6379KEEN ON AUBERGINE

Serves: 2

2 cups rice (cooked)
1 aubergines (chopped)
1/3 cup chickpeas
1/2 onion (chopped)
1/2 bell pepper (chopped)
1 cup chopped tomatoes
1 tbs harissa
1 tsp coriander (ground)
1 tsp cumin (ground)
1/2 tsp cinnamon (ground)
2 tbs olive oil
1/2 tsp salt

img_6380-Cook the rice as described on the package.
-Fry the aubergine with the salt, in the olive oil on a high fire, until it colours brown. (about 5min)
-Add the onion and fry them until they get brown edges. Then add the bell pepper and fry for about 2 minutes.
-Add the harissa, the coriander and the cinnamon and mix well until everything is covered.
-Add the chopped tomatoes and mix well. Then let it simmer for about 10 minutes on low fire. Stir now and then.
-Add the chickpeas and mix for one minute.
-Serve with the rice.

Holland&Barrett

img_7762I remember when I just moved to Hemel Hempstead, 5 years ago, and that I discovered Holland&Barrett. It was the first health store I went to and when I got home from my shopping trip, I called my mum to tell her that there is a really nice health store just 15 min walk from my house. Not knowing at that time that Holland&Barrett is the leading health shop in the UK. Because let’s face it.. Holland&Barrett is everywhere! I’m sure you’ve seen or heard of this shop. Just in case you didn’t know what I’m talking about or if you’re curious what I normally get here, I thought I make it a hotspot. Also.. how can a health store like this not be on my blog yet?!

img_7764Because my previous job was very close to Portobello Road, I mostly went to the one located there. It’s not a very big one, but they have a lot of vegan products though. Now, I most of the time go to the one in Westfield. They moved (to the opposite side) a while ago and now it’s much bigger and newer than it used to be. So there are 2 things I especially go to Holland&Barrett for. That is for the brand ‘Fry’s’ (I mostly get the traditional hamburgers) and the ‘BooTea’ detox tea. I don’t know other shop where they sell these 2 things and they’re simply the best when it comes to burgers and detox tea. And then when I’m there anyway, it might happen I also get things like: Vio life cheese, Provamel yogurt, coconut oil, plant-based milk, B12 supplements, snack bars, Moo Free chocolate and nuts/seeds. They have so many good products. Though, they also have products I think are really bad. For example (and I really don’t get this) quite a lot of their dried fruits etc, of their own brand, have sugar in them. Such a shame!

img_7763One of the absolute best things from Holland&Barrett is their discounts and sales! Because at first you think they’re quite expensive. Only if you look at the things on sale you can get so much stuff for really not too much money. Half price on my detox tea for example, but also on a lot of supplements and on big bags of nuts/seeds.. all great things, you normally pay a lot of money for. They also have ‘penny sales’ for example, where every second product is only 1p! How great right?! They always have some sort of sale going on + when you’re a member you get very nice coupons too. So make sure you get the H&B customer card and go shopping (you can also shop online)! Another thing I totally love about Holland&Barret is that, in the emails you get with discounts, veganism and vegan products are often highly promoted. On pancake day for example, they send a vegan pancake recipe. So cool!

Easter Puddy

img_7197Yayyy! It’s almost Easter! What does that mean? Easter brunch! Almost every year at Easter I go to Holland for an Easter brunch. Mostly me and my sister make it together, but this year my boyfriend is coming with me and so we will make it together. Of course my sister will make things too and even my brother and his girlfriend are going to make something. It will be so much fun having so much food on the table we all created together. I’m really looking forward to it. Are you going to have an Easter brunch? Last year the Easter recipes were one of the first recipes I posted here. Do you remember the Stuffed Green Eggs and the Hopping Bread? I will definitely make the ‘Hopping Bread’ this year too, tradition! Me and my boyfriend will also make this ‘Easter Puddy’, some healthy pudding in lovely pastel colours. Just in case you’re looking for a nice Easter recipe, this will definitely impress people, with the lovely colours and flowers on top.

Serves: 2

green
-2 tbs chia seeds
-1/2 cup oat milk
-1 tbs agave nectar
-2 tbs yogurt
-1/2 tsp matcha powder
-1/4 tsp vanilla extract
yellow
-2 tbs chia seed
-1/2 cup oat milk
-1 tbs agave nectar
-2 tbs yogurt
-1 tbs lemon juice
-1/4 tsp turmeric
purple
-2 tbs chia seed
-1/2 cup oat milk
-1 tbs agave nectar
-2 tbs yogurt
-2 blackberries
-1 tbs lime juice
pink
-2 tbs chia seed
-1/2 cup oat milk
-1 tbs agave nectar
-2 tbs yogurt
-6 raspberries
-1 mint leaf

extra
-1 slice apple
-2 raspberries
-2 mint leafs

img_7195-Blend the oat milk with the agave nectar, the yogurt, the vanilla extract and the matcha powder. Put it in a cup.
-Blend the oat milk with the agave nectar, the yogurt, the lemon juice and the turmeric. Put it in a cup.
-Blend the oat milk with the agave nectar, the yogurt, the blackberries and the lime juice. Put it in a cup.
-Blend the oat milk with the agave nectar, the yogurt, the raspberries and the mint leaf. Put it in a cup.
-Add 2 tbs of chia seed to each cup and use a spoon to mix it in. Mix well.
-Put it in the fridge overnight.
-Cut out little flowers from the apple (use a cookie cutter) and put it on top. Then place half a raspberry in the middle and a mint leaf on the side.

Strada

img_7766So, as many of you probably know, my favourite pizza is the pizza from Pizza East. They have the worlds best pizza, that is just a fact. I know, it’s a bit weird to write about Strada, but telling you that the best pizza you can eat, is at Pizza East. Though there is a reason, because before I discovered Pizza East, my favourite pizza was from Strada. They do have very yummy pizza’s too. I didn’t go to Strada for quite a while, because there is no Strada restaurant close to me and the ones that were closest to me, are all gone. Then a while ago, I went to Southbank in the afternoon, so I popped into Strada to have lunch.

img_7770I was very excited about going here again, just because I was wondering if I would still like the pizza that much, after being so used to the Pizza East pizza’s. So I normally always order a pizza with the same toppings: olives, mushrooms, onions, broccoli and aubergine. Though, then I saw this pizza called ‘Caprino’. It has tomatoes, roasted courgette and aubergine. It also has mozzarella and goat’s cheese, but I asked for olives and rocket instead of that. I just wanted to try something different. It had roasted veggies and I thought it was still a very safe choice. It turned out to be a very good choice, because it was delicious! I’m quite sure I’ll order it again, next time I’m here. You should really try it. What answers the question if I still liked their pizza. I sure did! The base is very thin though, what is img_7767good, but the only thing is that it’s a little soft in the middle, what makes it tricky to eat. The taste is good though. Neutral, but crispy, with more flavour on the sides where the oven burned the edges a bit (yum!). The tomatoes are semi-dried and they tasted so good with the roasted courgette and aubergine. After a whole pizza (yes I can eat a whole pizza) I was too full for dessert, but in case you want to oder dessert, they have sorbets in 3 flavours: mango, raspberry and lemon. They do have quite some vegan options on the menu. Olives and bread as a starter. Very nice rosemary/garlic potatoes, (skin on) fries, tender stem broccoli’s and salad, as side dishes. When I didn’t want to eat pizza, I often ordered 3 side dishes as a meal. Oh they also do a nice spaghetti with a tomato-basil sauce (order without the mozzarella) and bruschetta. The bruschetta looks very good. The lady next to me ordered it and she kept saying how good and tasty it was. So, a good thing to try too!

img_7768The Strada restaurants are very family/child friendly. The kids pizza’s are quite big btw. You could easily have them, with a salad on the side, as an adult lunch. The Southbank restaurant is quite a big restaurant, what is good, because it’s always busy. Mainly because of the tourists, but I also think because the National Theatre and the Southbank Centre are close. I like that the kitchen is basically in the middle of the restaurant and that you can see how and where the food is made. I also really like the big Italy prints on the wall, with the basil and yummy looking tomatoes. It sure works for your appetite! All together it’s a lovely restaurant to eat tasty food, but I do think it would be nice if they had a few more vegan options. It would also be handy if the menu showed you the vegan options available. They only specify vegetarian at the moment.

Black Chai / Berry Burst

My favourite tea by farrrr is chai tea, because I have a real chai latte addiction. I can drink it all day long.. and sometimes I do. Only I rather keep it for in the evenings, as a treat. It’s even a bigger treat when my boyfriend makes it for me and he does that very often. He is not a tea drinker himself, but he even likes this chai latte too. Chai lattes, for me, are definitely little moments of happiness. Do you want to know how I make it? Check out the Foamy Chai recipe! I used all sorts of chai tea for my latte, but the best one so far is the ‘Black Chai’ from Yogi.  It has a very powerful taste and especially when you leave the tea bag in a little longer, before pouring the milk in, the taste is define. Did I mention yet that it’s organic tea? Well, it is! No nasty pesticides in your cup of love. I also really like the little quotes and messages on each tea bag, I find it very exciting to read what it says. Drinking a chai latte and reading a wise quote before bed time is a perfect combination!

As a vegan (or vegetarian) you can’t just pop any sweets in your mouth. A lot of sweets contain gelatine and if they don’t, then they often contain beeswax. Only sometimes you just really crave sweets isn’t it? I must admit that I don’t really have that a lot, but if I do I like to eat some of the Biona sweets. These Berry Burst sweets for example. They are not healthy or anything, but they’re vegan and they are organic though. Also, they are actually very tasty. Very fruity and a nice consistency. As they’re quite small, have a nice red-pink colour and are nicely shaped, they’re perfect to use for decorating ice cream or cakes.

Stamp-Pot

img_8328Living in London, I often get the question ‘What is typical Dutch dish?’. Well.. There are not a lot of Dutch dishes. Of course there are the famous ‘stroopwafels’ and ‘speculaas’, but the only thing I can come up with is stamppot. What is basically mashed potatoes with vegetables mashed in it and a piece of meat on the side. There are different combinations (with kale as the most popular). It’s not a dish to be super proud of. This must be the reason that Holland is famous for a lot of things, but definitely not for the Dutch kitchen. Stamppot is an ok dish though, people eat it mostly in the winter. It’s a typical winter-dish in Holland. I thought it will be a nice dish on the last day of March. To really finish off the winter. I’m so ready for lots of sun! I was never a huge fan, but as I am a huge fan of Asian kitchen, I made a combination of the two. The one with potatoes, carrots and onions is called ‘hutspot’ and if I had to choose, then that is my favourite, so I used this one for todays recipe. I happened to really love it now, haha! I hope you will love it too.

Serves: 2 

-4 big potatoes (chopped)
-3 carrots (chopped)
-2 big hands spinach
-1 onion (chopped)
-3 tbs milk
-2 cloves garlic (minced)
-1 tbs sesame seed oil
-1/2 tsp coriander (ground)
-1/2 tsp cumin seeds
-salt/pepper (to taste)
-2 Vivera fillet steaks*

-Put the potatoes, the carrots and 1/4 of the onion in a pan and let it boil for 20 min. Until the potatoes and carrots are soft.
-Fry the onion until the edges start to get brown. Add the garlic, the coriander and the cumin and fry for 2 minutes. Add the spinach in the last minute and until it slinks.
-Add this mixture, the sesame seed oil and the milk to the potato-carrot mix.
-Add salt and pepper to taste.
-Serve with Vivera fillet steaks*.

*The fillet steak on the picture is from the brand Vivera. They do not sell this in the UK yet, but they soon will. It’s an amazing brand I’m sure you will love. So stay tuned! If you want to make this dish now, I recommend eating it on it’s own or to replace it with something else, like sausages.

Candy bar / VegiDeli pizza’s

Ok, if they were allowed, they probably would have name it Vegan Snicker, because that is what it is. Jokerz candy bars are exactly like Snickers. There is a difference though and that is, that it tastes even better than a real Snicker. I don’t think the package looks that appealing and attractive, but I’m happy I discovered them. It’s also nice to give it to non vegans, to show them that everything they van eat, we can eat vegan. Haha! My brother who is not vegan, really likes them too and I think everybody I gave them to, likes them. They say ‘nothing artificial’ and ‘no trans fats’, but that doesn’t make it healthy unfortunately. They’re definitely healthier than original Snickers. And you know.. once in a while, you can treat yourself, isn’t it?! I always buy them at Portobello Wholefoods, but I never seen them anywhere else. I’m sure you can order them online though, so get your hand on these!

A thing I kind of miss, is frozen pizza’s you can put in the oven at home. All the frozen pizza’s in the supermarket have meat or cheese on them. It would make such a difference to have a good pizza for vegans. I’m sure a lot of vegans agree with me here. A while ago I saw some advertisement for the V Bites pizza’s at Ocado (online supermarket) and I was very excited to try them. I didn’t  know they existed, but I ordered them straight away. My first thought was that they’re small, haha! I expected normal size pizza’s, img_2325but these are half of it. I ordered the 3 flavours, I tried them all 3 and they’re ok. They’re not amazing, but the base gets crispy in the oven and the cheese melts quite nicely. I missed vegetables though and more taste. That taste that you feel like you could eat another one. Out of the 3, I liked the ‘Cheezly & Tomato’ the best and I think if you put some mushrooms on it yourself, they will be a lot tastier. It was a nice try, but I don’t think I’ll get them again soon. Later I discovered you can also get them at Holland&Barret btw. Try them if you think you’ll like them.
