If you read my Christmas Holiday travel post, you know that I made this aubergine dish a lot when I was in Holland. This recipe is just real a winner. In all aspects. It is super easy to make, though it tastes like you have been cooking for hours, it’s super healthy and filling and everybody loves it! It’s a perfect dish for if you have a dinner party, for if a friend is coming over or to bring to someones house if you have been invited. I’m positive people will ask you for the recipe (you can just send them this link..). Also you can easily make a lot of it. You do need quite a big pan for the aubergine in case you want to double or triple the recipe. You might want to do that in two times. It’s worth it though!
KEEN ON AUBERGINE
2 cups rice (cooked)
1 aubergines (chopped)
1/3 cup chickpeas
1/2 onion (chopped)
1/2 bell pepper (chopped)
1 cup chopped tomatoes
1 tbs harissa
1 tsp coriander (ground)
1 tsp cumin (ground)
1/2 tsp cinnamon (ground)
2 tbs olive oil
1/2 tsp salt
-Cook the rice as described on the package.
-Fry the aubergine with the salt, in the olive oil on a high fire, until it colours brown. (about 5min)
-Add the onion and fry them until they get brown edges. Then add the bell pepper and fry for about 2 minutes.
-Add the harissa, the coriander and the cinnamon and mix well until everything is covered.
-Add the chopped tomatoes and mix well. Then let it simmer for about 10 minutes on low fire. Stir now and then.
-Add the chickpeas and mix for one minute.
-Serve with the rice.
