I can’t believe it, but it is my VANniversary today!! A year ago I was so excited to sleep in my van for the first time and today that is already a year go! It’s crazy how fast time goes. Some people were concerned and thought I might not like it as much, but I knew I would and I was right. I love it! I love my van and I love living in it. I even survived the winter. It only took about 248578 layers of clothing and my little heater to keep me warm (or as warm as possible). Anyway.. I thought it was a reason for cake! Am I right? So ‘cheese’cake it is! My sister lovesss cheesecake, but to be really honest with you, I never had proper cheesecake myself. By the time they got more and more popular I was
already vegan. I did have some raw types and some I liked, but most vegan cheesecakes I didn’t like. That is why I never bothered making one. But lately I see some nice vegan cheesecake pictures and then and I got inspired by ‘Wat Eet Je Dan Wel’ (Dutch blogger) who used vegan yogurt. So I looked up a few (vegan and non vegan) recipes, I did some experimenting and after a few tries and fails I created this one and it’s so good! I tried to keep this one classic, but I might do some more experimenting later to make some varieties. Salted caramel, toffee, chocolate or biscoff sounds like a good idea.. for now, it’s vanilla strawberry!
NO CHEESECAKE
Serves: 8
250 gr biscuits (smashed)
1/2 cup coconut oil (melted)
2 Alpro Greek Style (800 gr)
1/2 cup (brown) sugar
1/4 cup butter
5 tbs vanilla custard powder
1/2 tbs lemon juice
1 tsp vanilla extract
Pinch of salt
Fresh fruit (optional)
Springform cake tin (20-22 cm)
Electric mixer
-Preheat the oven at 180C.
-Mix the smashed biscuits with the coconut oil.
-Put the biscuit mixture in the bottom of a greased cake tin and use the back of a spoon to divide and push it down. Put it in the fridge for 20 min.
-Put all the other ingredients in a bowl and use an electric mixer to mix it for about 2-3 min on high speed.
-Pour the mixture on top of the biscuit base and put it in the oven for about 60 min. When the top starts to change colour (golden brown) switch off the oven, open the oven slightly and leave the cake in there for another 20 min.
-Let the cake cool down on the kitchen counter and then put it in the fridge for 1-2 hours.
-Decorate with fresh fruit (sauce).

It is true.. I’m 30 now! I still can’t believe it. It’s not like I can’t handle it, it’s more that I just can’t believe that I’m on this earth for 30 years already. Time flies. It makes me feel grateful to have reached this beautiful age, but I’m also living in a midlife crisis for the past 10 years already, haha! I always start overthinking it all and start panicking about everything I didn’t do yet in my life. I’ve got so many plans and there is just so little time. Now and again I just need a reality check though and I do realise I’ve done so much to be grateful for: I saved a pig (very important), started a blog a few years ago, converted a van (+ living in it) and I’m almost finished my nutritionist course. These are 3 things that I really really wanted to do in my life and were all on my bucket list. I can only imagine that, because I’ve done these things, life can only get better. Anyway, I thought it definitely deserved a cake and so I made a double cake for my 30th, with a nice filling in the middle. It’s an easy recipe, but all together it takes bit of time though, because of the cooling dow process. I hope you will love it though, just as much as I do (I’m actually having a piece whilst typing this.. YUM!).

Only 4 more nights until Halloween! I’m not a huge fan of this celebration myself, but I do like to create recipes for it, haha! And I’m sure if you’re really into it, you want to eat something that adds to the theme. Especially with children it’s a nice thing to do. This recipe is not only fun to make and to look at, but I tested it on children and they love it. If your children are a little bit older, then they will be happy to help you too. If it’s with coconut.. yes please! I have a big coconut addiction I’m afraid. I love products and recipes with coconut. It doesn’t matter if it’s chocolate, ice lollies, curries.. if it has coconut, I’m in! Ok, it does have to be vegan too. But luckily a lot of things with coconuts are as it’s used instead of cow’s milk. I also really like cake with coconut, I mean, who doesn’t right? So I created a coconut cake. I can already say it’s not healthy, as I used an area bas. You can of course replace the base for a healthy base if you want to make something a little more guilt free. But I do think this cake does really go well with the Oreo’s. So do you have a celebration coming up soon? Or do you just want to celebrate another day in your life.. this cake is perfect!

in a sandwich and so many more recipes. They have a naked version and a smoked version. The smoked version is nice for salads, sandwiches and wraps, because in a stir fry everything will taste like this and I can tell you that, even though it’s yum, it’s a little too much to have a whole dish taste like it. I’m so happy to have discovered this brand and the good thing is they sell it at quite a lot of shops, even the smaller Tesco’s for example. Hooray!

snack before or after the gym, because it’s high in protein. So if you want to get some extra proteins in, you better get some crackers and spread away (I got some garlic pita bread sticks and this is a perfect combination). You are vegan? That must mean you can never have a good time at parties.. you can’t go to barbecues, events, dinner parties.. This is what you get a lot as a vegan! People think you can only have a good time if you can eat dead animals or animal products. This is so not true! People associate having a good time with good food. I agree that good food makes things enjoyable, but apart from that eating a carcass of an animal is for me the opposite of having a good time, I also think that it’s more about the fun you have in general. The conversations you have and the people you meet. Or are you only going to the party to eat the food? If that is your main reason, you might have fun wrong.. haha! I do admit, that going to parties, eating out and all things around food was the last thing what kept me from being 100% vegan. Then I got over that, because I realised that it’s my body, my life and so it’s my choice. Then there was also the aspect of having vegan food available in situations as at other peoples parties. How do you handle that?
If I go to a birthday party and I’m not sure if there will be some plant-based food there, I bring some snacks myself and often I bring a lot more, so I can share. If I go to a wedding, a restaurant or even on a long flight, I always check if there is a possibility to have a vegan meal. If not, I bring my own. But in my experience it never happened that I had to bring my own, because there was always something. A good chef will always provide you with a suitable meal. It isn’t that hard, despite what people think. A little tricker is when you’re invited to a dinner party. In this case I offer to make something too and I bring it. Think of a fancy salad, sushi rolls, pastries, cakes, chocolate mousse.. things which are easy to bring and everybody will enjoy. This way you provide food for yourself and show others that it isn’t that hard to have good food. Try not too make too much different things as in some cases you might offend the host(ess). Depends a bit on who you go to though.
Say again?! Yes exactly.. this (and I’m sure you can think of so much more) is how you enjoy a cruelty free bbq party! Put on some suitable music, decorate the garden with lanterns, little lights, candles, open fires, blankets, cushions, napkins, nice table cloths and make people ask you to do this more often. Maybe you could make it a tradition. If I had a garden, I would have! You can ask people to bring a vegan dish, to encourage them to think of a barbecue in a different way. I hope this will become a real thing instead of smelling the flesh of roasted animals everywhere on a hot summer day.
Yay!! Today Planet Manel is 1 year old! Already for a whole year I’ve been writing about my passions. If you follow me for a while already, you know that this is mainly veganism. I love having my blog and I dare to say that I grew a lot in the past year. There were a lot of things that needed to improve and still there are things I work on and I try to improve every time I write something.
