It’s almost Halloween!! Notttt really my thing, but I do really like to create recipes with a theme. There are a lot of Halloween recipes that are everything but healthy. That’s why I wanted to create something that looks scary, but is not scary to eat, haha! I really like the outcome, because I love chia pudding and in combination with the fruit and the cinnamon it’s so tasty. You can use any plant based yogurt, but I used the plain version of the Coconut Collaboration. I love this yogurt anyway, but especially in this recipes it just works really well.
BLOODY MESS
Serves: 2
1 cup red summer fruit
1 tbs goji berries
1/2 tbs agave nectar
1/2 tsp cinnamon
1/4 tsp vanilla extract
250gr yogurt
1/3 cup rice milk
3 tbs chia seed
-Put the yogurt, rice milk and chia seed in a bowl and mix it well. Then put it in the fridge for 2 hours (or overnight).
-Put the fruit in a sauce pan and warm it on medium heat, until it starts to be like a sauce. Keep stirring. (For frozen fruit it’s about 5 min. For fresh fruit about 3 min.)
-Take the fruit off the fire and add the goji berries, the agave nectar, the cinnamon and the vanilla extract. Mix well and let it cool down.
-Mix the chia pudding before dividing it into 2 glasses.
-Put the fruit mixture on top and use the back of a spoon to draw the lines down the pudding.
-Add some extra goji berries on top if you wish.

Yayyy! It’s almost Easter! What does that mean? Easter brunch! Almost every year at Easter I go to Holland for an Easter brunch. Mostly me and my sister make it together, but this year my boyfriend is coming with me and so we will make it together. Of course my sister will make things too and even my brother and his girlfriend are going to make something. It will be so much fun having so much food on the table we all created together. -Blend the oat milk with the agave nectar, the yogurt, the vanilla extract and the matcha powder. Put it in a cup.
