Happy 3rd Anniversary!! + Cookie Dreams

I can’t believe it, Planet Manel is celebrating her 3rd anniversary! When I started 3 years ago I was feeling so motivated, because I finally found something where I could combine all my interests. I love creating.. I always did. As a child I was always drawing, making mood boards, writing short stories, designing.. With this many interests it’s sometimes hard to choose something. As I also really like animals, I studied ‘Animal Care’. After that I also did ‘Interior Design’. For both I have my diploma and for both things I’ve got a huge passion. Hence why I’m vegan, live in a van and design tiny houses for a hobby. My head is always full of ideas. Anyway.. before we get off the subject, I’m super proud that I kept blogging for the last 3 years. Some months I posted a lot and some months a little less, but I always kept going. I want to tank all my readers and people who followed my journey and parts of my life. Also all the people who made my recipes and a huge thank you for all the sweet messages. I couldn’t have done it without all of you. You are the best!

At the moment I can feel that I’m more focused and that the overall quality is improved. This motivates me even more, because it’s nice to see growth. Blogging is something I could only dream about. I tried it when I was a teenager, but without a real goal, I always gave up after a while. But this time the dream is bigger! I want to inspire you, make you feel happy, show you how easy it is to eat plant-based, to live with compassion and to just make the world a little better, starting with YOURSELF! Even when it’s only a little bit and it’s only changing 1 animal’s life at a time or when it’s your life.. to make you smile, to make you feel good and to let you taste yummy recipes. Talking about recipes. For the occasion I created these delicious vanilla, chocolate chip, cookies. To create the ultimate recipe I seriously baked 50+ biscuits. I had something in my head and I didn’t give up until I found the golden combination. I was so happy when I finally succeeded and I’m excited to share them with you! I called them ‘Cookie Dreams’, because they are a celebrations of dreams coming true.

COOKIE DREAMS

Makes: 6

1 cup plain flour
3/4 cup brown sugar
2 tbs corn starch
1 tsp cinnamon
1/4 tsp baking soda
1/2 tsp salt
1/4 cup sunflower oil
1 tbs plant-based  butter
3 tbs plant-based milk
1 tsp vanilla extract
20 gr dark chocolate (chopped)

-Preheat the oven at 200C.
-Mix all the dry ingredients (except the chocolate) together in a mixing bowl.
-Add the oil, butter, milk and the vanilla extract and mix well, until you have a nice sticky dough.
-Divide the dough into 6-8 pieces and flatten them (until they’re about 1/2-1 cm) on the (with baking paper covered) tray. Leave 3-4 cm between each biscuit, because they will go a little bigger.
-Divide the chocolate on top and slightly push them into the dough.
-Put them in the oven for about 12 min.
-Let them all cool down before getting them off the tray.

Heavenly Ice Cream

n3Nicecream is very healthy. Greatest invention ever I would say. It’s ice cream, what you can actually eat all day long if you want to. Though, the nicecream recipe I’m going to give you today, you better don’t eat all day long. Even though you really want to after tasting it. It’s very good, very heavenly, but not so healthy. This nicecream contains the yummy Biscoff biscuit spread from Lotus. My favouriiiiiteee! So be prepared to be amazed, but try to hold back a little, ok? Now go to the supermarket and get yourself a nice big jar of ‘Biscoff’ spread and biscuits! Hehe..

n2HEAVEN’S ICE

Serves: 1

-2 frozen bananas (chopped)
-splash of plant based milk
-2 tbs Biscoff spread (or 3?)
-1 tbs Biscoff biscuits (crumbs)
-1 tbs cashew nuts (chopped)
-1 tsp palm sugar

-Put the frozen bananas in the blender with the Biscoff spread and add a splash of plant based milk. (I like to use Oatly foamable)
-Blend until it’s thick and smooth.
-Put the nicecream in a bowl and sprinkle biscuits, cashews and palm sugar on top.

Biscuit Feast #2

img_6795You might have notices that if I use berries in my recipes, it’s most of the time blueberries. I love blueberries. The consistency, the taste, the colour and you can make so many things with them. What is not to like?! Today I used them in the Biscuit Feast recipe. It’s the second Biscuit feast recipe. The last one had 2 varieties: ‘Raise your hand for Raisins’ and ‘Nuts for Coconut’. They were both super healthy. Today’s one is healthy too, but then without the white chocolate. You can easily decide not to add the chocolate, they will still be super tasty! They’re amazing with a nice cup of tea, but you can also have them for breakfast (ok, I’d recommend making them without the chocolate in this case..). One thing is for sure, when you’re feeling blue, I’m sure these will quickly cheer you up. Enjoy!

img_6794FEELING BLUE

Serves: 10

-1,5 cup oats
-2 bananas (medium)
-10 blueberries
-20 gr white chocolate
-1/2 tbs coconut oil

-Preheat the oven at 180C.
-Mix the bananas and the oats until it’s a dough. It should be quite sticky.
-Divide in 10 little balls and but a blueberry in the middle. Then make them flat.
-Put them in the oven for 15 minutes.
-In the meantime melt the chocolate a bain marie and add the coconut oil.
-Let the biscuits cool down and put some white chocolate on each. Put them in the fridge for 10 minutes to let the chocolate get hard again.

Biscoff Spread / Alphabet Biscuits

If you ask me about what I think they serve in heaven, I will say ‘Speculoos’. This is what we call it in Holland, over here we call this amazing spread from Lotus: ‘Biscoff Biscuit Spread’. It’s super unhealthy, loaded with bad bad sugars and bad fat.. you really shouldn’t look at the ingredient list! Hehe.. Ok, you should, because then you hopefully can hold yourself together and try not to eat the whole jar at once. Yes, sometimes I eat it from the jar.. It’s also delicious on white bread with butter (just adding to the healthiness here), crackers, biscuits and apples (no this still doesn’t make it a responsible snack). Last Friday I posted a simple recipe with this amazing spread, ‘Spread Magic’. It’s a hot chocolate.. you should try it! At first there were only biscuits, but later they made spreads out of it too. Can I get a Hallelujah?! The biscuits are originally from Belgium and are already around since 1932. Do you want to know more about this brand? Check out their website.

Yes, these are actually children snacks. Though, why can’t we adults eat them too?! I like the brand ‘Organix’, because they do not use any crap in their products and most of it is vegan. So if you want to give your kids a nice snack, I’d like to recommend them. But that is why it’s also a nice snack for adults. I’m not saying you can now swap your salad with packs of biscuits, but once in a while, as a snack, is totally fine. They btw, taste great with the Biscoff Spread. Though, adding crappy nutrition onto good stuff might be considered as a sin. They don’t have a very strong taste, but that is what I like about it I think. They’re just nice simple biscuits. They come in little packs, what makes it handy for on the way and perfect for sharing too. Give them a try! If you want to know more, please check out their website.
