Cccrumble Crumble

13211137_1151392944904807_445924953_oDutch apple pie.. yum! So so good!! The sweet, fresh apple in combinations with the cinnamon and the perfectly soft, but firm crust.. it’s just delicious. I always wanted to have at least apple pie on my birthday. In Holland you have quite some desserts based on appel pie, but no vegan variation. When I once used a bit of apple juice in my nicecream instead of almond milk, I got inspired and created this recipe.

Serves: 2-3

6 frozen bananas (chopped)
1/3 cup apple juice
1/2 tsp cinnamon
topping
1/4 apple (chopped)
1/3 cup oats
1 tbsp raisins
2 dates
2 walnuts (4 halves)
1 tbsp palm sugar
1/2 tsp cinnamon

-Put the apple, the oats, the raisins, the dates, the walnuts, the palm sugar and the cinnamon in a food processor and mix until it’s all combined (don’t make it too small).
-Spread it on a oven tray (with baking paper) and put it in the oven for about 10 min, until it’s a little crispy.
-Let it cool down slightly.
-In the meantime, put the bananas, the apple juice and the cinnamon in the blender and blend until it’s nice and smooth.
-Serve the nicecream in a (cold) bowl and add the topping.
