Are you vegan and did you used to like pasta carbonara? Or do you want to make something nice for an omni friend or family member? A vegan pasta carbonara: Veganara! This is definitely a good comfort food, but also very nice to make when you have company over. I’m sure they’ll like this! Did I mention that it’s also super easy to make? You can make this within 10 minutes. As you can easily make the sauce in the 8-10 minutes the pasta is cooking. You don’t even need that many ingredients to make this fantastic plate of food. For the bacon style pieces I used the ones from Vivera. They don’t sell these in the UK yet, but they will come soon. So until then, you need to use another brand or make it yourself.
-200 gr pappardelle
-1 cup vegan bacon (I used Vivera)
-2 cloves garlic (minced)
-1/3 cup cream (I used Alpro)
-3 tbs cream cheese
-1 tbs nutritional yeast
-1 tbs fresh parsley (chopped)
-1 tsp olive oil
-salt/pepper (to taste)
-Cook the pappardelle as described on the package.
-Fry the garlic in the olive oil for just 1 minute.
-Then add the vegan bacon and fry for 2 minutes on a high fire.
-Add the parsley and fry for just half a minute.
-Lower the heat and mix in the cream and the nutritional yeast.
-Add the pasta to this and give it a good mix for another minute.
-Add salt/pepper to taste and sprinkle some extra parsley on top.
