Quinoa Queen

12999687_1130626650314770_642358016_oQuinoa is just amazing. It’s considered a complete protein and it’s naturally gluten free. It also contains B-vitamins, vitamin E, calcium, fiber and is a source of magnesium and iron. You can use quinoa for all sorts of dishes. Warm, cold, burgers, salads etc. So apart from that it’s tasty and you can make so many different dishes with it, it is also super healthy.
A true Queen.

Thats why today a lovely and easy to make lunch or dinner recipe with quinoa and a lot of yummy vegetables. You can eat this warm, but also cold and turn it into a salad.

INGREDIENTS:
1/2 cup quinoa (uncooked)
1/2 small butternut squash (sliced)
1/2 red bell pepper (sliced)
1/2 red onion, (sliced)
1/2 cube vegetable stock
marinade
2 garlic cloves (mashed)
1 tbsp sesame oil
2 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 tsp turmeric
decorate
1/2 spring onion (diced)
1 tbsp hemp seeds

-Preheat the oven to 200C.
-Cook the quinoa as described on the pack together with the vegetable stock.
-Put the squash, the bel pepper and the onion in a mixing bowl.
-Put the olive oil, sesame oil, garlic, salt, pepper and the turmeric in a cup with a lid. Shake it well and mix it in with the vegetables.
-Spread the vegetables on the oven tray(covered with baking paper) and put them in the oven for 15 minutes.
-Sprinkle the hempseed and the spring onion on top just before serving.
