Sweet potato crisps / Turmeric shot

SWEET POTATO CRISPS
I am a big big sucker for sweet potato! I love it! I can eat it every day.. from the oven, fried, in my salad, with my dinner.. you name it. What means, sweet potato crisps are heaven for me. Though from the ones I’ve tried, the lightly sea salted crisps from Tyrrells are definitely my favourite. The taste is the best, but what I really like is that the crisps are not flat, but all in weird shapes. It crunches so nicely in your mouth and the taste seems to be better, I don’t know why. It must be the whole experience all together.. haha! The only ingredients they use for this one are: sweet potato, sun flower oil and sea salt. The crisps are hand cooked in England, gluten free and have nothing artificial in them. They also have one with sweet chilli flavour, but this one has sugar in it unfortunately. The one with coconut and lime is not vegan, so watch out!

TURMERIC SHOT
Turmeric is so food for you. It is a root which has anti-inflammatory properties and has lots of anti oxidants. It may also prevent and slow Alzheimer + some forms of cancer. I can list a whole bunch of benefits right here, but a quick google will get you there too. You can use turmeric in you curries for example, but eating it raw is most beneficial. Then there are also these turmeric shots. They are perfect for an easy dose of this goodness. I tried the turmeric shots from James White and I really like them. It’s made with pressed apple juice, 15% of pressed turmeric, some concentrated lemon juice, organic chilli flavouring and a black pepper extract. The apple juice makes the taste less strong, in case you don’t like the taste too much. I got mine from the Whole Foods Market, but several health shops sell them. You can also order them online of course.

Sweepo Spread

What do you put on your sandwiches? It’s a question I get quite a lot. Of course you can spread your toast and sandwiched with nut butters, jam or houmous, but there are so many spreads you can make yourself, to add nutrition and to enjoy something different. Today I’m giving you a spread made of sweet potatoes. The great thing about this spread is that you can make sweet and savoury combinations. Spread it on a piece of toast, sprinkle some nuts and drizzle some agave nectar on it and you have a great sweet breakfast or snack. Combine it with some spicy rucola and black peppers and you will have a yummy savoury variant. You can of course also add cucumbers, tomatoes, lettuce.. you can combine endlessly. It’s great for a bbq too! Check out Vegan Partying for some bbq ideas and serve this spread for the baguettes (and salads). I’m sure everybody will love it!

SWEEPO SPREAD

-2 medium sweet potato
-1/2 cup chickpeas
-1 tbs tahini
-1 tbs lemon juice
-1 clove garlic
-1 tbs olive oil
-salt/pepper (to taste)

-Preheat the oven to 200C.
-Wash the sweet potatoes and put them in the oven for 45-55 minuten (depending on size).
-Let the potatoes cool down.
-Put it all in the food processor or blender and blend until smooth.
-Add salt/pepper to taste.
-Store in a closed container and keep it in the fridge.

Xmas Dinner

img_3262It’s almost Christmas! Are you reeaaady?! I wasn’t really, as I wanted to post this recipe a little earlier, but I didn’t have enough time. Sorry guys! Are you a real Christmas fan or do you think it’s all a bit too much? I personally really like Christmas, especially buying the presents and making a nice Christmas dinner for my family. At first my dad, my sister and I always made it together. My sister and I did the starter or the dessert and my dad did the main, but lately me and my sister are doing everything, what is nice too. My sister is really good at making desserts, so I decided to do the rest. I chose to do some simple things and also we’re just going to img_3264put everything on the table, instead of making every single plate. We did this because it’ll be a lot easier with 8 people and you can just take the things you like best. Now you’re probably curious about what I’m going to make? I’ll make a dill-beetroot salad and stuffed sweet potatoes from the oven, but there will also be lots of other veggies on the table like brussel sprouts, pumpkin, green beans, corn cobs and broccoli. Yum! If you don’t know what to make for Christmas yet, then this might inspire you. It’s easy to make, it doesn’t involve hours in the kitchen and it’s quite on budget too.. oh and did I say it’s delicious?!

img_3261BLOODY SALAD

Serves: 2

4 Beetroots (chopped)
2 tbsp mayonaise
1/2 avocado (chopped)
1 walnut (chopped)
1/4 cup peas (frozen)
1/4 tsp fresh dill (chopped)
1 cup spinach
2 tbsp feta (crumbled)

-Get the beetroots which are already cooked, the ones that are vacuum packed.
-Defrost the peas by putting them in boiling water for 10 minutes.
-Mix everything together and crumble the feta + come extra dill on top.

Serves: 2

2 sweet potato
1/2 black beans (canned)
1/2 onion (chopped)
1 clove garlic (mashed)
4 baby corns (chopped)
1 tomato (chopped)
1 tsp fresh parsley (chopped)
2 tbsp cream cheese
pepper/salt (to taste)
2 tbsp cheese (grated)
1 tsp olive oil
pepper/salt (to taste)

-Preheat the oven ay 200C.
-Rub some olive oil and a little salt on the sweet potatoes and put them in the oven for 50-60 minutes (depends on how big your sweet potatoes are).
-In the meantime you fry the onion, the garlic and the baby corns in the wok for about 6-8 minutes.
-Add the black beans, the tomato, the parsley and some pepper/salt and keep mixing it for 2 more minutes.
-Take the wok from the stove and mix in the cream cheese.
-Cut open the sweet potatoes, stuff them with the filling and put some grated cheese on top.
-Put the potatoes back in the oven (or grill) for a few minutes, until the cheese is nicely melted.
