Nutty Banana

A44D95A5-A78C-4783-8CBB-53CC0ED590A0I had lots of ripe bananas and I was craving something baked. The logic thing to do would be to bake a banana bread and that is exactly what I did! I didn’t plan it, so I created a recipe with things that I had. As soon as you collected all your ingredients it’s actually a very easy recipe. Anyone can make it! I already have a banana bread recipe on my blog (Bananananana), but having 2 is not going to hurt anyone. This one is made with nuts and a secret ingredient: almond flour! It honestly is the best banana bread that I’ve ever made. Banana bread and nuts are just such a good combination. I ate it with greek style yogurt from Oatly (hugely recommend this!!), some organic maple syrup and toasted coconut and it was sooo good! I hope you will enjoy it as well!

Makes: 8 slices.

Dry ingredients:
1,5 cup flour
1/3 cup (rolled) oats
1/3 cup almond flour
1/2 cup of (coconut) sugar
1/3 cup chocolate drops (optional)
1 tsp baking soda
1/2 tbs cinnamon
1/2 tsp salt
1/3 cup flakes almond
1 cup nuts* (chopped)

Wet ingredients:
4 (very ripe) medium bananas (mashed)
flax egg**
1/3 cup plant based milk
1/3 cup melted coconut oil/butter
1/2 tbs vanilla extract

Extra:
butter/oil for greasing
1 ripe banana (sliced)
cream/greek style yogurt (optional)
maple syrup (optional)
toasted coconut (optional)

*tip: walnuts/pecans!
**mix 2 tbs flaxseed + 3 tbs plant based milk and set aside
for about 5 min.

Tip: Use a stroke of baking paper (with the width of the baking tin you are using) underneath the banana bread, so you can lift it out of the baking tin easily when it’s ready.

-Preheat the oven at 180C.
-Mix all the dry ingredients together.
-Mix all the wet ingredients together.
-Mix the dry and the wet ingredients together.
-Grease a baking tin and pour the batter in the tin.
-Place the sliced banana on the top and press it lightly into the batter.
-Place in the middle of the oven for about 50-55 min.
-Let it cool down, before slicing.
-Eat with cream/greek style yogurt, maple syrup and toasted coconut.

Nuts For Seed

After last week’s brownies, we need something healthy. It’s all about balance! This is probably one of my fave recipes. It’s healthy, full of omega’s and multifunctional! You can eat this for breakfast, lunch or snack. It will taste nice with jam, cheese, houmous, butter, avocado and I think basically everything. It’s very filling and a great way to add some good fats to your diet. It’s not hard to make (it’s actually super super easy!), but it does require some time though. The good thing is that, afterwards, you can easily keep it in the freezer. Make sure you slice it up first and then freeze. This way you can take out the slices you want at any time. I’m very curious what you think of it and who will make this. Definitely a must make!

NUTS FOR SEED 

Serves: 10

1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/4 cup linseed
1/4 cup chia seed
1/2 cup walnuts
1/2 cup pecans
1/4 cup hazelnuts
1,5 cup rolled oats
1/4 cup wheatgerm
1 tsp salt
2 tbs maple syrup
3 tbs coconut oil
1,5 cup water 

-Mix all the dry ingredients.
-Mix all the wet ingredients and mix them with the dry ingredients.
-Leave it for about 15 min. and then stir again. Make sure all the liquid is soaked up.
-Grease a tin with coconut oil and put the mix in the tin. Press it down and smooth it out.
-Put it in the fridge overnight (or for at least for 3 hrs).
-Preheat the oven at 175C and put the tin in the oven for 30 min.
-Let it cool down for about 30 min and then carefully take the loaf out of the tin.
-Preheat the oven at 200C.
-Put the loaf upside down on a piece of baking paper and put it in the oven for another 10 min.
-If all the side are nice and dry (and slightly crispy) the loaf is finished.
-Let it all cool down before slicing it up (putting it in the fridge for an hour helps to make neater slices).

Nutty Coconut

13275400_1157046781006090_253796899_oHow I love coconuts and peanut butter.. it’s 2 of the many pleasures in life! So why not make a combination of these 2? That’s why I came up with this very creamy milkshake. It’s the tastiest thing and so simple to make. I always have these ingredients in my house and I don’t want to come across as bossy.. but so should you! Haha! Remember to at least always have a can of coconut milk in your fridge and frozen bananas in your freezer. Because this milkshake is a perfect snack in the afternoon or to use before/after a work out. I’m sure you can find a good time and a good reason to drink it. Here we go..

serves: 1

250 ml almond milk
1/2 cup coconut cream*
1 frozen banana
1 (big) tbsp peanut butter
1/2 tsp cinnamon
decorate
1 tsp coconut (dried)
1 tsp almonds (chopped)

-Take the cream from the can of coconut milk (you can use the water for smoothies or other recipes) until you have 1/2 a cup.
-Mix all the ingredients in a blender until it’s nice and smooth.
-If you like you van decorate the milkshake with some coconut and chopped almonds.
*the coconut cream is the cream in a can of coconut milk and it works best if it comes from the fridge.
