Honest Heart

What is better than a caramel covered heart? Well, I guess that would be a heart that truly cares about your heart. Isn’t that where love is all about?! Caring for each other. Real, honest love. Valentine’s Day is nice and all, but it’s also quite commercial. Make sure that the day of love isn’t ending in something superficial, but show the people you love how much you really care about them. You can start with making them this caramel heart. Hehe.. A pure honest heart, because there aren’t any bad ingredients in here. All healthy and good for you. In fact, the first ingredient you will see, are chickpeas! HONEST HEART

serves: 6-8

Cake
1 can chickpeas (drained)
1/2 cup peanut butter
1/2 cup of maple syrup
6 soft medjool dates
Splash of milk
1/2 cup almond flour
1/4 cup desiccated coconut
4 tbs cacao powder
1/2 tsp baking soda
1/4 tsp salt

Caramel Topping
10 medjool dates
1/4 maple syrup
1/3 cup coconut milk
1/4 tsp vanilla extract
pinch of salt

Dried (or fresh) berries (optional)

-Preheat the oven to 180C.
-Mix all the wet ingredients in a food processor until a smooth paste: peanut butter, maple syrup, dates and a splash of milk.
-Add all the dry ingredients to the paste: almond flour, coconut, cacao powder, baking soda and the salt. Blend until you have a sticky dough.
-Put the the dough onto the baking tray and shape it into a heart (2-3 cm thick). Put the tray in the oven for about 20-25 min.
-Mix the ingredients for the caramel sauce in a food processor until a smooth sauce.
-Let the heart cool down and put the caramel sauce on top. Decorate with fresh or dried fruit.

Last year the recipe ‘Soulmates‘ was a great success, so I came up with another Valentine’s recipe for this year. What is more romantic than sharing? Because isn’t love all about sharing? Sharing your thoughts, your happiness, your pain, your smoothie bowl.. Yes! Start Valentine’s Day as romantic as can be, with this lovely pink smoothie bowl to share! You can decorate it the way you like it.. I let the kids help me with the decoration of mine and that meant an overdose on edible glitters, haha! Oh well.. is there something as too much glitter? Serves: 2

-2 cups unsweetened plant-based yogurt
-1 cup frozen raspberries
-1 big ripe banana
-1 tsp chia seed
-decorations: coconut flakes, edible glitters or flowers, sugar ornaments etc.

-Put everything in the blender until smooth.
-Decorate with coconut, glitters, edible flowers or whatever you think your love will like. You can actually make it really personal this way.. be creative!
-Serve immediately.

img_5821Valentine’s day is almost here, so I thought I’d give you a nice and easy recipe to make for you and your lover! ..or for the people you love and you want to share them with. Because that is what Valentine’s Day is for me, a day to celebrate love! Celebrate the love between you and you partner, you and your family, you and your friends or you and your guinea pig.. it’s all alright. I don’t like the commercial side of Valentine’s Day. The glittery hearts, sugary sweets and the teddy bears you have no idea what to do with. I rather make the people I love something nice, and put all my love in there. I’ll give them cards to express what I feel for them. Not that the 14th of February is the only day I’ll do that, but why not celebrate a day of love? This world needs all the love you can spread! Now make these easy no-bake chocolate hearts. They’re delicious.. and healthy!

Serves: 12-15 pieces

filling
1/3 cup walnuts
1/2 cup soft dates (pitted)
1/4 cup desiccated coconut
1/2 tbs chia seed
2 tbs coconut oil.
1/2 tbs cocoa powder
pinch of cinnamon
pinch of salt.
sprinkles
1 tbs shredded coconut
a drop of beetroot juice
chocolate sauce
1/4 cup coconut oil (melted)
1 tbs agave nectar
1/2 tsp vanille extract
1/4 cup cacao
pinch of salt

img_5823-Put all the filling ingredients in a food processor until it’s sticky.
-Make little heart shapes using your hands or use a heart-shaped cookie cutter.
-Put them in the fridge for 30 min and in the meantime make the sprinkles and chocolate sauce.
-Mix 1 tbs of shredded coconut with 1/2 tsp of beetroot juice. Then carefully mix it with the left over coconut.
-Mix all the ingredients of the chocolate sauce together until smooth.
-Dip the hearts into the chocolate and make sure they’re all covered. Then use a fork to lift them out and place the chocolate covered hearts on a try with baking paper.
-Sprinkle the pink/white coconut over the heart before the chocolate is dry.
-Put them in the fridge overnight or for about an hour.
