Wrap It Up

A super quick lunch dish.. wraps! Wraps are easy, super tasty, nutritious, handy to take with you, easy to prep and filling. Perfect for lunch, but they can be enjoyed any time of the day really. I like wraps for lunch though. Especially bean wraps. They are high in protein and what I like about it, is that I can make everything the day before. The next day (and the day after that) I only need to warm up a tortilla wrap and scoop everything on top. You fold it up and it’s ready to go. If you want to take it with you, I advice you to cut it in half just before you will eat it, to prevent everything falling out. I hope you will enjoy these delicious wraps just as much as I do.

WRAP IT UP

Serves: 4

4 wholemeal tortilla wraps

filling
1 tbs olive oil
3 cloves of garlic (finely chopped)
1 onion (chopped)
1/2 can chopped tomatoes
½ -1 tsp chilli flakes
1 can black beans (rinsed, drained)
1 can kidney beans (rinsed, drained)
1 tbs harissa(optional)

salad
2 tomatoes (chopped)
½ cucumber (chopped)
½ cup sweet corn
handful of fresh coriander (chopped)
juice of ½ a lemon

sauce
1 avocado (smahed)
1 clove of garlic (minced)
1 tsp lemon juice
salt/pepper to taste

-Fry the garlic and the onion in the olive oil until they go a little soft (about 2-3 min).
-Add the chopped tomatoes, the chili flakes and the harissa and mix it well. Let it simmer for about 2-3 min.
-In the meantime: mix the avocado, the garlic, the lemon juice and add salt/pepper.
-Also mix the tomato, the cucumber, the sweet corn, the coriander and the lemon juice.
-Add the beans to the tomato sauce and mix for another minute. Add salt/pepper to taste.
-Spread about 2 tbs of guacamole in the middle of a tortilla, add the bean filling and the salad and close the tortilla by folding it (fold the left and the right side towards the filling and then roll it up).
-Cut the wrap in half and enjoy.

Roasters / Mince Pie

At work they got a free product from Ocado, called ‘Roasters’ from Dilly&Wolf. They didn’t like it, so they asked if I wanted to have it. The flavour they got was ‘sea salt and cider vinegar’. Now I don’t like crisp or chips with vinegar on it, so I assumed I wouldn’t like these either. Just because they turned out to be vegan I tried them and I surprisingly liked them. I ate the whole pack in one afternoon. The structure is totally yum and I even liked the flavour. Now that’s a first when it comes to salt&vinegar. I looked them up and they do 4 more flavours: wasabi&horseradish, soy&ginger, coconut&chilli and sweet&salty. Check out their website to see what they look like. They’re all vegan, but as the salt&vinegar only has 4 ingredients I think that one is the healthiest option. They do use good products though and it’s not crap. I’m curious about the other flavours too! I think it’s a perfect snack for in the evening, watching a movie or something.

It’s Christmas time and that means ‘mince pies’! Here in the UK everybody is crazy about them. A lot of them are not vegan, but Cafe Nero does a vegan one. I think they deserve a huge compliment for offering a vegan version, well done them! I never had a mince pie before, so I was very curious about them. Why was everybody so crazy about them? So a while ago, I popped into a Cafe Nero and ordered one. First of all, they look very nice. I really like the star on top. When I took a bite it was kind of what I expected and to be really honest I don’t really like it. It’s just way too sweet for me. I did really like the dough around it, it was perfect. I assume that the middle was tasty too, but it’s just my personal taste what thinks it’s too sweet. I’m happy I tried one and if you like mince pies, try the one in Cafe Nero. It’s a nice size too!

Old Jacket, New Look

13461078_1170643926313042_26380596_oWe all know the classic ‘jacket potato’ with baked beans. Super delicious of course, but you can do so much more with that good old jacket potato. There are hundreds of recipes you can think of for a potato. The potato is basically nice with anything, thanks to its neutral taste and texture.
It’s a lovely meal for when you have a busy afternoon a head of you or after you can finally sit down. It’s tasty, filling and I think for a lot of people it’s very high on their ‘comfort food list’. It’s an easy recipe, but if you include the time it needs to be in the oven, it’s not a fast meal. Though, you could make the potatoes and the sauce in advancem so you only have to warm it up. Because if you had a long day and you’re hungry, waiting for your food for over an hour isn’t much fun.
This jacket potato is super tasty, with its healthy and filling sauce. He might keep his old jacket, but let’s give him a new look on the inside!

OLD JACKET, NEW LOOK

2 big potatoes
sauce
1 can mixed beans
2 tomatoes
1/8 cup tomato paste
1/4 cup chickpeas
1/2 red pepper
1/2 tsp Oregano
1 small clove of garlic (mashed)
extra
1 tbsp cheese (grated)
1/3 spring onion (diced)
1/2 tsp olive oil

-Preheat the oven to 200C.
-Rub a little bit of olive oil on each potato and put them in the oven for 25 minutes.
-Turn the oven down to 170C and bake the potatoes for another 50-60 minutes until they’re nice and soft.
-In the meantime blend the tomatoes, the chickpeas, the red pepper, the tomato paste, the oregano and the garlic until it’s a smooth sauce.
-Pour this in a sauce pan, add the beans and let it boil for 2 minutes on a low fire.
-Open the potatoes on the top and pour in the bean sauce.
-Sprinkle the spring onion and the cheese on top and serve.
