Azka Ftour

He was actually the first friend I made within the first 2 weeks of moving to the United Kingdom, so I know him from the start. It didn’t work out between us as a couple, but I’m still friends with him. We had a nice time together and we used to do a lot of fun stuff. One of the things I really liked was eating breakfast together. We sometimes ate it for lunch or dinner too, because it’s so nice and I liked it so much. Now the traditional breakfast had egg, yogurt and cheese. At that time I was vegetarian and so I was ok with that, but now being a vegan, that changed. But because I like it so much and I didn’t have it for so long, I decided to make it vegan. I left some things out and replaced the egg by a vegan version. The result is very yummy and I’m sure to make it more often from now on. Oh and ‘Azka Ftour’ means the nicest breakfast. So there you go.. 

AZKA FTOUR

4 pita breads
100 gr houmous (see recipe)
1/2 cucumber
2 tomatoes
10 olives
1/8 cup olive oil
1/8 zaatar
vegan egg
100 gr tofu
1/4 cup chickpeas
1 large garlic clove (minced)
1 tbsp nutritional yeast
1 tsp cornstarch
salt/pepper to taste
2 tbsp water
1/3 spring onion

-Mix the tofu, chickpeas, garlic, nutritional yeast, the cornstarch, the water and the salt and pepper in a food processor and blend until you have a smooth mixture.
-Put a little olive oil in a frying pan and when that’s hot you can slowly poor the mixture in and spread it out until it’s about 1/2 a cm thick.
-Sprinkle some zaatar and spring onion on top.
-Fry on low/medium heat for about 8-10 minutes, until the top is dried up.
-For the houmous, you can use the recipe in Dippy Dips. You just leave out the bell pepper, so you’ll have a plain variant.
-Put everything on plates and nice dishes.

How to eat it:
-There is no cutlery involved here, because you use the bread to dip and to grab.
-For the zaatar you first dip the bread in the olive oil and then into the zaatar.
-For the egg you grab/break a piece with the bread. Yum!
-You can make your own combinations in your mouth. Combine houmous with tomato and cucumber. Have some olives in between or with your bread dipped in zaatar. Be creative!
