How do we celebrate the launch of PlanetManel? Only with my favourite cake! I always like to make this cake for my birthday or when I feel the need to impress people, haha!
Apart from that it’s so(so so) good I like that there are no bad ingredients. It’s a lovely cake to make if you have something special to celebrate, but it will also go really well as a dessert for a diner party! It’s rich, nutty, creamy.. but I cant think of a good way to describe it. I guess you have to make it and taste it to know what I mean..
Serves: 8
INGREDIENTS:
crust
1 cup oats
3 tbsp peanut butter (100% peanuts)
120gr dates
1/4 coconut oil
1/8 agave nectar
1/4 tsp salt
filling
1/3 cup agave nectar
1/4 cup palm sugar
1/4 cup corn starch (shake with 1/3 cup water)
1/4 tsp salt
1 cup almond milk
1 1/2 cup coconut milk
1 1/2 cup cashews (soaked overnight)
3 tbsp flaxseed (mixed with 6 tbsp of water)
1 tbsp vanilla extract
1-2 banana (thinly sliced)
decorate
1 banana
1/4 cup crushed peanuts
Cocoa powder
Palm sugar
Berries (blueberries, raspberries) (optional)
INSTRUCTIONS:
-Put the flaxseed mixture in a little cup and leave it for 20 min until sticky.
-Blend the agave nectar, palm sugar, cornstarch, the salt and the flaxseed together very short until well blended. (or use a whisk)
-Then blend the cashews, coconut milk, and almond milk on high speed in a blender until a smooth mixture.
-Put the cashew mixture in a sauce pan on medium heat until warm.
-Whisk in the sugar mixture until well blended. Keep whisking until it becomes thick and begins to boil. (Then keep doing this for about 10 min.)
-Transfer it to a bowl and whisk the vanilla extract until completely combined. Then let it cool for about an hour.
-In the meantime make the crust: Put the oats, coconut oil, peanut butter, dates, agave nectar and salt in a food processor until a fine crumble and blend until it’s thick and sticky. Add a little bit of water(1 tbsp at the time) if needed.
-Put a little bit of coconut oil on the bottom of the cake tin before you spread the crust over it. Press the crust firm and evenly and put it in the fridge for at least 30 min.
-When the filling cooled down spread half of it over the crust. Then spread the banana slices over the filling and then spread the rest of the filling on top of the bananas.
-Cover and let it set overnight in the fridge.
-Decorate the cake with slices of bananas, crushed peanuts, cocoa powder, palm sugar and serve with some berries.
